Not exactly the recipe from YouTube that I followed because of what I had in the house, but they were truly delicious and had the best peanut/hoison sauce I've ever made. Would have been prettier with red cabbage but I didn't want to drive to the market.

Peanut Hoisin Sauce
1/4 cup peanut butter - I used natural peanut butter
hoisin sauce - two tablespoons
honey - one tablespoon
sriracha - one teaspoon
white vinegar - one teaspoon
sesame oil - one teaspoon
warm water - 3 tablespoons
If you've never worked with rice paper watch some videos to show you how to rehydrate them - shouldn't be in the room temp water more than 5 seconds - they will soften up very quickly as they side on a surface that they won't stick to.
Innards: Boston or butter lettuce leaf, bean thread vermicelli cooked as per package directions, thinly shredded cabbage, carrots, blade of green onion, shredded cucumber (I used pickled slices) cilantro, mint leaves, Thai basil, sauteed shrimp halved lengthwise. All should be at room temp - not hot.
