I called it "Snowed-in" because not having all the required ingredients I got a little adventurous substituting bamboo shoots for the pickled radish, and adding carrots and green pepper. A few ingredients aren't in the picture (soaking rice noodles, chopped peanuts and cilantro and lime juice. I LOVE pad thai. I adapt this recipe according to what I have in the house.
