As usual I had to make a few adaptations: Instead of halving the sweet potatoes, because I wanted to air fry them, I cut them into cubes. Diced the onions about the same size, tossed them with olive oil and air-fried them at a preheated 390F (highest my fryer goes) in three 5 minutes/toss, cycles.
While that was going on I drained the chick peas, added the seasonings and sauteed them. When the 15 minutes of air frying time for the potato/onion mix I added spinach leaves to eh poato mix because I didn't have kale - I should have added more than a couple of large handsful. It was very good and I was craving more. It got limp quickly - maybe 3 or 4 minutes of air frying.
I heated a bag of the quinoa and rice mix for 1 minutes and 15 seconds (per the demonstrator in Costco or Sam's) and put it in a soup bowl. Topped that with the potato/onion/spinach mix, added the sauteed chick peas and drizzled with the tahini sauce.
We both really liked it. It's a do-over! (Makes 3 hearty servings).
