A Friend's Overnight Bananas Foster Bread Pudding

Does not look as good as it tasted - I would use more sliced banana

Overnight Bananas Foster French Toast Casserole - His Recipe and Comments

Banana Topping

4 T butter, melted
2/3 C brown sugar
2 T light corn syrup
1 t vanilla
1 T banana liquor (or 1/2 t rum extract: get REAL! use 1 T dark rum)
1/2 t ground cinnamon
2 medium ripe (not overripe) bananas, sliced
pecans or black walnuts: whatever suits you

French Toast

2/3 loaf French bread, cut into cubes
4 oz reduced-fat (not in MY household!) cream cheese, cubed
6 large eggs
1 C low fat milk (whatever's in the frig; I prefer whole milk . . . surprised?)
1/4 C granulated sugar
1/2 t ground cinnamon
1/4 t ground nutmeg
1 t vanilla
pinch of salt
powdered sugar

1. To make banana topping, stir together melted butter, brown sugar, corn syrup, flavorings, and cinnamon
2. Lightly grease a 9 x 9 baking pan (if doubling recipe, use a 13 x 9 DEEP dish casserole dish)
3. Pour butter sauce into prepared pan
4. Place banana slices over the sauce. Sprinkle pecans or black walnuts over the bananas.
5. Layer half of the bread cubes over the bananas.
6. Place the cream cheese cubes over the bread cubes.
7. Cover with the remaining bread cubes.
8. Whisk together eggs, milk, sugar, vanilla, cinnamon, nutmeg, and pinch of salt; Mix well.
9. Pour the egg mixture over the bread. Smoosh the bread down a little so that the bread can absorb the egg mixture. (Do it again just to hear that Smooshy sound!)
10. Cover and refrigerate overnight.
11. Take the pan out of the refrigerator and leave it out while preheating the oven to 350 degrees.
12. Uncover and bake on a rimmed cookie sheet (you'll need it to catch any topping that may bubble out) for 55 minutes. Check with toothpick to make sure casserole is cooked in center.
13. Let it cool in pan 5-10 minutes
14. Invert to serve and sprinkle with powdered sugar (to make it look so professional and pretty, OR just eat it right out of the pan if you can't wait!).
