Spinach Squares

Great hors d'oeuvre, very little work, lots of flavor. Can be served warm or cold. Keep well in the fridge and can be frozen. One of our favorites.

1. Grease 8 x 8' baking pan with olive oil or butter.
2. Beat in bowl: 3 eggs, 1 cup flour, 1 cup milk, 1 tsp salt, 1/2 tsp pepper, 1 tsp baking powder
3. Add to bowl and mix in: 2 pkg. frozen spinach, thawed and squeezed dry; 2 cups shredded cheddar cheese, 1 cup chopped onion (I also added some garlic powder)
4. Dump mixture into pan
5. Bake at 350 about 30 minutes (lightly browned around edges. I cut mine into approximately 1 1/4" squares.
[Freezes well; reheat when thawed at 325° for about 12 min's.]

Cut larger we have them for breakfast fairly often. A bit like a crust-less quiche.

Going to have to make this, I'm sure I will love it. My husband absolutely HATES spinach, so I'll have them all to myself.
