this is one of my favorite omelets.... it is served at the cafe at rosemont in new jersey. it is fluffy and stuffed with cheddar cheese and black beans. it is sprinkled with a bit of tomato, cilantro and red onion and then finished off with a bit of sour cream.
it is served with amazing bread and sweet butter.
i was starving and it was the perfect spring sunday brunch!
