Crust:
1/2 cup hard butter
1 cup sifted flour
1/2 cup icing sugar
Topping:
2 eggs
1 cup white sugar
3 tbsp. lemon juice
2 tbsp. flour
1/2 tsp. baking powder
dash salt
Crust:
Combine flour and sugar and cut butter in like pastry.
Press into a 9" x 9" pan. Bake at 350F for 20 minutes.
Topping:
Mix together all ingredients and pour over hot crust.
Bake at 350F for 30 minutes.
Sprinkle with icing sugar.(Even better if you add fresh lemon rind to the topping!)
Cut into squares and serve
