Aside renowned Cannelloni (veg version) on the left, on the right you can see Maccheroni alla chitarra* with pallotte cace e ove**, a dish rather difficult to find even in Italy.
This is the excellent version I found at Hotel Santa Maria restaurant, alias "Euclide".
* Maccheroni alla chitarra are a speciality from the Abruzzo region, made by rolling a sheet of egg pasta slightly thicker than normal and forcing it through the chitarra,
a set of closely strung strings very much resembling the strings of a guitar.
The end result is a spaghetti-like pasta, but square in section.
** Pallotte cace e ove (Molisan Italian for polpette formaggio e uova / cheese and egg balls, Molise region traditional recipe)
Bon appétit (visuel) à tous / Good (visual) appetite everybody ;-)
