Southern Italy culinary tradition first course

view map

Aside renowned Cannelloni (veg version) on the left, on the right you can see Maccheroni alla chitarra* with pallotte cace e ove**, a dish rather difficult to find even in Italy.
This is the excellent version I found at Hotel Santa Maria restaurant, alias "Euclide".

* Maccheroni alla chitarra are a speciality from the Abruzzo region, made by rolling a sheet of egg pasta slightly thicker than normal and forcing it through the chitarra,
a set of closely strung strings very much resembling the strings of a guitar.
The end result is a spaghetti-like pasta, but square in section.

** Pallotte cace e ove (Molisan Italian for polpette formaggio e uova / cheese and egg balls, Molise region traditional recipe)

Bon appétit (visuel) à tous / Good (visual) appetite everybody ;-)

Oh that does look good. I heard on the news pasta makers in Italy are going to strike over the rising costs of pasta ingredients :>)

Jeanne is right. And between cooking and eating, they find sometimes the time for a (very) quick shot... ;-)

Ray - Italians are always either in the kicthen cooking or eating what has just been cooked. It's a rule! Ask my Italian mamma!

ma è splendido il piatto decorato, con le semplici posate accanto e tovaglia e tovaglioli, contrapposto allo spettacolo giallorosso (sarà un caso?) della portata... buone vacanze di cuore caro Adal...
