Tomato/Strawberry Jam

Quick Tomato/Strawberry Spread
From Country Woman

INGREDIENTS

* 2 cups chopped peeled ripe tomatoes
* 1-1/2 cups sugar
* 1 package (3 ounces) strawberry gelatin

SERVINGS: 18

METHOD: Stovetop

PREP: 5 min.

COOK: 20 min.

TOTAL: 25 min.

DIRECTIONS

In a large kettle, bring tomatoes and sugar to a boil over medium-high heat, stirring often. Reduce heat; simmer for 15 minutes. Remove form the heat; stir in gelatin until dissolved. Cool for 10 minutes. Pour into jars or freezer containers, leaving 1/2-in head space. Top with lids. Let stand until set, up to 24 hours. Refrigerate or freeze. Yield: 2-2/3 cups.

Well...that was a lot of small tomatoes to peel, but I finally gave in and made this. Waiting for it to gel right now...and from my test tastin' I have to say it's "finger-lickin' good". More than anything else it tastes like strawberry preserves. I didn't have quite 2 cups of chopped tomatoes so it seems a bit loose, but I'm sure it will be good. Thanks for posting this. As a result, for the first time in my life I learned how to peel a tomato. One of the sites I visited on the web said to make a shallow "x" on the bottom of the tomato before it went into the boiling water for 30 seconds. (Then the tomatoes were drained and dumped into ice water that I prepared beforehand.) That "x" made it very easy to strip off the peel.

How do you peel the tomatoes easily? I will be using small plum tomatoes.

Sounds fascinating. I have tons of Juliet (small plum) tomatoes. Would love to give this a try.
