Indian Railways seemed to have cut back their catering operation since my earlier visits, so I was overjoyed to see my old favourites, veg cutlets. Note the heart shape. It tickles me to think of someone in the train's pantry car stamping them out.
The Taj Bengal Hotel in Kolkata calls them "railway cutlets"; maybe the railways invented them.
