Eggs Really Don't Need To Be Kept Cold

If they don't " Blow Up In Your Hand" when you crack them, they are still good to eat!!! ( In Mexico eggs are not allowed to be colder than 70 degrees at anytime.............)

Eggs are typically not kept cold in Europe either. A sequoia back-country ranger we met on the PCT said he kept two months worth of eggs at room temperature, all that has to be done is flip them once a week.
