Peanut Butter Kiss-mas Cookies
(makes 30-40 cookies)
By Sara Brenner
Pre-heat oven to 350 degrees.
Cream 1/2 cup each of shortening, peanut butter, white sugar, and brown
sugar.
Stir in one egg, 2 tablespoons milk, 1 teaspoon vanilla extract, 1 teaspoon
baking soda, and 1/2 teaspoon salt.
Sift 1 1/4 cups of flour and stir in gradually.
Shape into walnut-size balls and roll in sugar (I use red and green sugar).
Bake on lightly greased cookie sheet or parchment paper for 11 minutes.
Top with a Hershey's kiss (I use brown and white-striped "Hugs"), and bake
for 30 more seconds.
After the cookies cool off, I find it helpful to put them in the freezer for
a while to make sure the kiss is hard and holds its shape.
Happy baking!
