In southeast Louisiana we make coffee with pure coffee, sometimes coffee and chicory. We make it very strong that you cannot see the bottom of the cup and sometimes a spoon can stand up in it. This is the coffee of my family's choice--pure and dark roasted. A demitasse cup of it in the morning will keep you awake all day.
