Fresh Apple Muffins

Found this recipe in a stack I had printed out a long time ago. Wish I had tried it sooner. Really delicious. I love to eat breakfast out, but on cold mornings I prefer to stay in...and wanted to make something special for Sunday breakfast.

Fresh Apple Muffins

2 cups diced apples (don't peel if organic)
1/2 cup sugar
1/2 cup raisins (Trader Joe's Jumbo Raisin Medley recommended by author)
1 cup flour
1 tsp baking soda
1 1/4 tsp apple pie spice or 1 tsp cinnamon
1/2 tsp salt
1/2 cup chopped nuts (I used finely ground - big hunks will make it harder to cut the muffin)
1 tsp vanilla powder (author uses this from Penzey's; plain vanilla works)
1 egg, beaten
1/4 cup oil.

Cut the apples in quarter-inch dice and put into small bowl. Add the sugar and stir together with the raisins.

In a larger bowl, whisk together well the flour, baking soda, apple pie spice, salt, chopped nuts and vanilla powder (if you're using the powder).

In a 1 cup Pyrex measuring cup, mix the oil and egg together. Add vanilla if using liquid vanilla. Pour this liquid in with the apples and mix gently.

Add the wet ingredients to the dry ingredients and mix just until the flour is incorporated.

Using a 12-cup cupcake tin, spray 10 or 11 of the cups with Pam and fill nearly to the top with the dough. These muffins don't rise much.

Bake 25 minutes at 325°F. Remove from oven and pan right away and cool on a rack.

Sounds and looks delicious, Isabel. I just went to our church's bake sale on friday and what I bought was fresh apple bread. I bet it was very similar to your muffins and it was a perfect chilly fall day breakfast.
