Funnel Cake

The Fair is in town and I got a yen for a Funnel Cake so I checked my Mastercook program and came up with this recipe, which I halved from these amounts for Bill and me. Used vanilla instead of cardamom

Cardamom Funnel Cakes

2 cups all-purpose flour
2 tablespoons sugar
1 teaspoon baking powder
1 teaspoon ground cardamon
1/4 teaspoon salt
2 eggs -- lightly beaten
1 cup milk (1 to 1-1/4 cups)
powdered sugar for sifting over the funnel cake

Oil for deep frying.

Combine flour, sugar, baking powder, cardamon, and salt in a mixing bowl. Combine beaten eggs and 1 cup milk ; pour into flour mixture and stir until smooth. If batter is too heavy, add additional milk (I needed much more). Preheat oil to VERY hot. Test with a small drizzle. It should puff up immediately. Batter should pour in a heavy stream. Better to pour from a large measuring cup with a pouring spout. It gets hot over a funnel! Serve warm with powdered sugar or syrup.

May have to try this, oh my belt size. Glad you changed to vanilla, I don't know what cardamom is. 8-)

Hmmm. Interesting. I've seen these before but have never tasted one. I'll have to give this recipe a try!
