All of this travelling had made us all hungry, so off to the ANA mess hall we went. Yes, an ETT's job is still not done. One of the other things we do is inspect the food preparation of the ANA dining facility. Now you need to remember, that these people for the most part have always lived in mud fortresses called "Kalates". No running water, no electricity, no facilities other than mud brick blinds usually located inside the walls of the Kalate (Ka Lot). I have purposely not enhanced any of this photo to show a small "mishap" in the installation of the exhaust fans in the Dining Facility. The fans were wired backwards, blowing the smoke from the wood burning stoves back IN to the facility, instead of out. I have heard that this was a contract flaw and all dining facility fans in the country were wired this way.
