Pios Servicio de Catering (Pios Catering Service)
After visiting San Ildefonso in La Granja I stopped with my host family to buy lunch at Pios
which is a catering service in San Cristóbal. They also sell take-out food. Earlier during the
home stay, I had to write a paper for class about a craftsman in the village where I was living.
Many people leave San Cristóbal in the morning to work in Segovia. However, there are a few
businesses in the village. In order to write my paper I spent the morning at Pios watching one of
the women who worked in their kitchen. I stood out of the, way just watching her work. When it
was almost time for me to leave I was able to ask her some questions about what she did. She
had been making “canalones”. They are made by wrapping a mixture of ground fish in a square
of pasta. Then they are covered in tomato sauce and another sauce which is similar to sour
cream. For lunch, my host family bought “canalones” like the ones I had watched being made.
