This is prized as a delicacy throughout Spain. They are the whole legs of a relatively small number of free-range pigs that feed exclusively on acorns. You can buy your own leg, or just get slices. These are cut as thin as slices of proscuitto, of which their flavor is reminiscent. When a store cuts from a leg, they drape the open section with fat, to keep it from drying out.
