Méthode Champenoise

This bottle rack was traditionally used for the "riddling" process in the making of champagne (sparkling wine).
Workers periodically rotated the wine bottles as the wine fermented and also adjusted the angle to a more vertical position.
The human touch is being replaced by the faster and more efficient bulk methods.

Hi,
Link to next photo seems to be broken.

Ohhh, you are so lucky to live in Hawaii.

Great photos.
