Successively smaller pots were used as the sugar concentration increased. Raw sap
is about 2% sugar. It takes about forty gallons of sap to make one gallon of syrup.
Not having containers suitable for boiling over a fire, American Indians boiled
all the way to maple sugar by placing hot rocks into hollow logs or gourds full of sap.
