I've made it before with only one pound of chicken thighs, but the package I bought today weighed 3 lbs. I figured that rather than use my mortar and pestle which was too small to hold all the ingredients, I would try making the marinade in my Vitamix. After the chieken marinates overnight I will find out if the substitution worked.
This is a fantastic recipe and really doesn't require much preparation. You just have to find the lemongrass for which there is no substitute. I found it in an Asian market, in the past and grew some of it, but it died from overwintering outside. I won't let that happen to the plant a friend gifted me with this year.
