SWEET POTATO & RED BEANS
Tools: Air Fryer and Oven Safe dish.
I sliced in half a large Sweet Potato. Placed in Air Fryer Pan.
Seasoned with Liquid Aminos, Pepper, Garlic, Ginger.
AirFried for 30 minutes on 400. (The potato could be boiled.
I like the crispy layer on top of an AirFried Sweet Potato. )
Removed Peeling from Potato and placed in oven Safe Dish.
Topped Potato Halves with Pinto Beans; Scoop of Salsa,
Slices of Non-Dairy Cheese, a few Cherry Tomatoes halved.
Added around edges of Sweet Potato Sliced Mushrooms, and Onions.
Sprinkled a Tbsp Nutritional Yeast over everything.
Added another Sprinkle of Pepper, Garlic and Ginger.
Carefully poured less than a 1/2 Cup Low Sodium V8 juice
around the edges of the oven dish
Baked 30 minutes in preheated oven set at 375F degrees.
(After 10 minutes I covered the dish in oven.
Served with Side of Steamed Greens and Onions; sliced Beets.
DELICIOUS meal.
