Soup & Burrito

This Burrito was a “Throw-together” with what was available
for a quick fry in the iron skillet.

I Spread some Humus as an initial sauce; added leftover rice mixture
that had some sautéed vegetables in it; added a few sliced sliced
Cherry Tomatoes, Sliced Onion, and a thin slice of mock Meatloaf
(made with beans/lentils, nuts, Tofu… [recipe in my food gallery] tastes
like meatloaf hot or cold.) and scoop of Salsa. Folded Burrito.

Iron Skillet: added a 1/4 C Low Sodium V8 Juice.
Medium heat. Added Burrito and scooped
several tsp of Tomato Juice to top of Burrito and fried
several minutes on each side. Watching carefully so it doesn’t stick to skillet.

SOUP—I had made Vegetable-Tomato Soup earlier and just heated it up.

Hearty meal. I could only eat half of the burrito.
