Non-Dairy Cheese & Mushroom Quesadillas, and Veggie Soup
(The homemade soup can be enjoyed whole or blended. However, the blending process does take away the brilliant color. )
Soup:
2 Cups non dairy milk
2 Cups Low Sodium V8 Juice
1 Can Diced Tomatoes
Sliced Bell Pepper, Celery, Onion, Mushrooms ( provides extra Iron)
Cherry Tomatoes
Peas ( high in protein)
Handful Fresh Spinach
1 TBSP Ground Flaxseed (7 vitamins & minerals, and a gram of protein)
Pepper, Garlic, Basil, Ginger
Quesadillas:
Large Spinach Wrap
Spread light amount of Low Sodium V8 juice on Wrap.
Added 2 Slices non dairy cheese.
Spread extra thin slices of Mushroom and a little spinach.
Tucked in sides of Wrap and folded.
Heated Iron Skillet with thin coating of the V8 Juice.
Added prepared Wrap and Fried.
Turning over often until cheese is melted well.
Delicious! A real treat!
