Eat for Health

STUFFED PEPPERS
I had not used Yellow peppers for this before. They are fantastic stuffed and baked. Began by carefully cutting out the stem and seeds. Rinsed well.

Recipe: stuff cleaned and cored peppers with — 2 Tbsp Steamed Rice, Chopped Onion, Sliced Mushroom, Diced Tomato, and about 1/2 Cup Lentil Loaf. Topped with 2 Tbsp Salsa. Baked at 350F for 35-40 minutes. Enjoy!
