Began by carefully cutting out the stem and seeds. Rinsed well.
Using a spoon I stuffed the peppers with —
2 Tbsp Steamed Rice; some Chopped Onion,
Sliced Mushroom, Diced Tomato, and
about 1/2 Cup Lentil Loaf. Topped with 2 Tbsp Salsa.
Baked 350F for 35-40 minutes. I’d never used
Yellow peppers before.
They are fantastic stuffed and baked.
