Dried Chewy Bananas.
Nothing like the tasteless dehydrated chips.
I quarter them, then put them through a 50/50 lemon water wash
(with a splash of brandy, because why not)
and place them on racks.
They go in the oven at the lowest setting (mine's 170°) with the door propped open
to maintain air flow and make sure they don't bake.
Depending on the size of the bananas and how ripe they are it can take anywhere from 6 to 10 hours.
They stay good for a very long time - several months at least - and remain extremely stable with no loss of flavor.
Great to have on hand when you want a banana but haven't been out to the store.
I do about 20 bananas at a time just to make it worth the effort since the oven's on for so long.
