It was BBQ experiment day. This time I tried smoking pork bellies. It worked well. The pork has plenty of fat so that the result is very tender. It doesn't dry out. I finished them in the oven where it is easier to monitor temperature. They were mighty tasty. They are destined for a pot of beans and bacon which turned out most excellent.
