Cambodian pepper beef is a delicious dish with stir fried tender and savory beef placed on to of a bed of onions, tomatoes, and lettuce. This recipe is for 2 servings or can easily serve 4 if served alongside another main dish.

INGREDIENTS

Lok Lak Cambodian Peppered Beef Ingredients:

• 12 oz Flank steak Skirt steak (or Rib Eye)
• 1 Large cluster tomato
• 1 small sweet onion or red onion
• 1 heart of romaine lettuce or butter lettuce
• 5 Large garlic cloves(minced)
• 1/2 tbsp soy sauce – suggest Golden Mountain Soy Seasoning Sauce
• 2 tsp Fish Sauce – suggest Three Crabs found in Asian aisle or Asian markets
• 1 tbsp Oyster Sauce
• 1/2 tsp ground black pepper from black peppercorns
• 1 tbsp of brown sugar
• 2 tbsp olive oil or vegetable oil
• 2 tsp corn starch

Dipping Sauce
• 2 tbsp lime juice (fresh)
• Pinch sea salt or kosher salt to taste
• 1 tsp ground black pepper

INSTRUCTIONS
Prepare the beef
Thinly slice the beef and place into large bowl. Combine the soy sauce, oyster sauce, fish sauce, and brown sugar into a a medium bowl. Mix the marinade together and pour into the beef bowl. Gently massage the marinade into the beef and set aside for marinating process while you prepare the salad. To use corn starch, mix corn starch and water in small bowl and set contents of bowl aside. Mince the garlic set aside for later use.

Prepare the salad
Wash and clean the vegetables. Slice the tomatoes in to tomato slices to medium thickness or cut as tomato wedges. Slice the onions into rings, medium thickness. Separate each lettuce leaf and place lettuce leaves interspaced on large serving plate. Layer the tomato slices on top of the lettuce bed. Intersperse the onions evenly over the tomatoes.

Cook Beef
Place wok or large frying pan on high heat. Add olive oil or vegetable oil and brown garlic. Once garlic is browned add marinated beef and stir fry for 2 minutes turning frequently for medium beef. Adjust to your preference (ex medium rare). To thicken, add corn starch mixture 30 seconds before beef is cooked.

Final Steps
Move cooked beef directly from wok and gently place evenly onto previously prepared salad bed. Garnish with cilantro. Sprinkle black pepper to taste. Serve immediately and enjoy.

Dipping Sauce
Combine Lime Juice with salt and pepper to taste. Place in small bowl for each serving.
