The eggplant and mini peppers called for came from pots in my garden. Next year they'll be in the ground where they will produce more abundantly. I didn't have ground bean sauce in my normally very well stocked Asian pantry and fridge, so I substituted shiro miso.
If you've done any Chinese cooking you know that shiitake mushrooms take a long time to rehydrate, but they can be very quickly softened by using boiling water and then the microwave. I will post the instructions in this gallery.
