Salad for a meal made yesterday. Was blessed with fresh cherry and yellow tomato buds, baby cucumbers, too, so felt inspired. Do you know the benefits of onions? Amazing—helps bones, reduces risk of cancer, aids digestion, fights bacteria, provides iron, fiber…. A salad can be an entire meal—adding protein with peanuts and/or pistachios, other favorite nuts, pumpkin seeds, sunflower seeds, etc. I mixed together chopped Napa Cabbage, Romane Lettuce, sliced mushroom for more iron, and Kale for the base. I like to add slices of avocado. Seasoned with Celery seeds, Garlic, Basil, and a dash of pepper. Had some left over lightly steamed carrots. Threw them in, too. (Insert smile)
