This is grown mainly for its intensely coloured leaves rather than as vegetables.
The cool temperatures in a conservatory causes the rosette of broad leaves to lose chlorophyll,
revealing colouration ranging from white, pink, rose, red to purple.
While it is edible, it has a bitter flavour, and if used in food, serves more as a garnish.
