This Vegetable-Bean soup is absolutely delicious. I made in a crockpot
But it could be cooked stovetop.
Crockpot on high (3 hours)
1 can ea—Pinto Beans and Chic Peas (rinsed)
1 can diced Tomatoes
1 Cup Chopped Okra
3 inches chopped Leek
Several chopped mushrooms
2 large handfuls chopped cabbage
1 sliced apple
2 TBSP Maple Syrup
1 Cup low sodium V8 Juice
1 Cup Water
1 Chopped Purple Japanese Squash or other vegetable
Garlic
Celery Seed
Ginger
Pepper
Italian Seasoning
Dried Mustard
German Thyme
In last 15minutes of cooking—add dumplings
Dumplings :
2 Cups Jiffy biscuit Mix
2/3 Cup non dairy milk
Chives
Mix well
Form balls of dough and drop into boiling soup
Cook Dumplings 15 minutes.
