Mesquite Beans

Quail Creek, AZ

The fruit of the mesquite is the mesquite bean. The original Native Americans in the region would collect the beans and grind them into flour. From the flour they would make tortillas to eat. This is a sweet flour and makes great cookies.

Most of these trees that produce "beans" are quite messy.

Reminds me of acacia trees, but without the thorns.
