Without eggs! Started with 8.5 Oz box
Jiffy Corn Muffin Mix and followed recipe
Except in place of the egg, I used
1/4 cup Apple Sauce. Baked in Toaster Oven
for 20 minutes at 400F degrees. Yummy

Coupled with a can of Red Pinto Beans (rinsed)
that were cooked with a little Water, Onion, Green Pepper,
Thyme, Oregano, Pepper, Garlic.

A serving of steamed Carrots and Bok Choi made
this meal complete.

(The Vegetarian version of Jiffy Corn Muffin Mix uses a
Plant based oil instead of Lard.)
