Toaster Oven Eggplant Sausage (spicy) with Tomato Sauce.
The Greens (Bok Choi, Beet Greens) are seasoned
with Balsamic Vinegar; other veggies seasoned with Garlic,
Cumin, Pepper, Salt. Soaked the sliced potatoes
in cold water before Air Frying.
