Ham and Corn Fried Rice

Using leftover baked ham! First, cook some basmati rice according to the packet directions, drain and spread out
on a tray to cool and dry. Fried rice is always best made with cold rice; hot, it can be a tad mushy!
Cut cooked ham into small chunks – I like to slice it thickly and pull it into small chunks. Cut green beans
into 4 – 5 cm lengths and blanch in boiling water for about 3 minutes, drain and set aside. Cut the kernels
from a couple of cobs of fresh corn and set aside. Cut a couple of roasted red peppers (from a jar) into chunks,
a couple of skinned tomatoes into chunks and a small deseeded red chilli into thin slivers. Now fry a chopped
shallot or two together with a crushed clove of garlic for a few minutes, then add the ham and all the vegetables,
stir-frying these all together for another couple of minutes. Finally, stir in the cold rice, mixing gently all
together until everything is piping hot. Serve in warm bowls.
