We had a nice Easter Sunday feast. In our family that means ham and potato salad. We usually get a ham knuckle and boil the heck out of it. It ends up pretty much like pulled pork and tastes great. Today I got to looking at the label of the ham we got and I was stunned to see that includes 23 weight percent of added ingredients. It is not hard to figure out what that stuff is when you see the first three ingredients are water, dextrose (sugar) and salt. Boiling removes some of the salt and sugar. Actually, who cares anyway. It tastes good. We also had some asparagus and cauliflower. Nice meal. Good company (Ginny). Nice sparkling wine.
