We had this for breakfast this morning. I'm not crazy about traditional breakfast foods and my husband is very flexible!
Korean Vegetable Pancake

Serves: 2
For a large 12 inch pancake (I made two approx.. 7)
Ingredients
About 2½ to 3 cups 0f sliced vegetables
4 green onions, cut into 1 inch long
⅓ cup leek (optional), sliced thinly 1 inch long Didnt have substituted regular onion
3 ounces zucchini matchsticks (about 1/2 cup) Didnt have substituted purple cabbage
1 green chili pepper (or jalapeρo), optional, sliced
3 ounces onion, sliced
⅓ cup sweet potato (Cut into very thin sticks)
1 fresh mushroom (white, baby portobello, or shiitake)
Also, for batter in separate bowl:
Ύ cup all purpose flour
½ teaspoon kosher salt
Ύ cup water
vegetable oil
Dipping sauce
1 tablespoon soy sauce
2 teaspoons white vinegar
1 teaspoon hot pepper flakes, optional
1 teaspoon toasted sesame seeds
Even Better Sauce!
The Best Sauce:
1/3 cup sour cream
1/4 cup mayonnaise
1 tsp garlic powder
1 tsp Sriracha hot sauce (or less!)
2 Tbsp fresh lime juice, (plus lime wedges to serve if desired) I buy a bag of limes, juice them and pour the juice in an ice cube tray and then store the cubes in a freezer container.
