It was Ginny's birthday today. We never pass up an opportunity to celebrate any occasion. So I decided I was going to produce a most excellent lunch. She requested fajitas which I like. They are very easy to prepare. I also made refried beans from scratch which proved to be most excellent. Went so far as to get some lard to do it right. I will never use canned refried beans again.
The big deal today was a cake made up of 8 inch chocolate-chocolate chip cookies and a peanut butter cream frosting. The recipe looked simple enough, but it turned into quite a project. I started cooking at 8:00 am and never left the kitchen (except for a call from our son Robert) until 2:00 pm when we finally sat down to eat. Everything was terrific. The cake turned out to be sensational. A good time was had by all. The peasants rejoiced and peace returned to the realm. Life is good.
