Over the years we have accumulated two handles of Tequila given to us at parties at our house. Remember those?? I personally don't like Tequila or Margaritas so there are two bottles (1.75 liters) that have inhabited my liquor cabinet for a long time. So these two bottles have been hogging space in my liquor cabinet when I could find much better stuff to store in there.

I decided to come up with a drink that I might like to get rid of them. After much thought and experimentation I came up with a cocktail that adequately disguised the Tequila. It is simply one ounce of red vermouth, five dashes of Angostura bitters and two ounces of Tequila. Sort of like a Manhattan. On the rocks, of course. It is actually not terrible, but I would never order such a drink at a bar. I decided that it should be called the "Adios Amigo."

One thing you can do is set up a muddling bar. This is a fun activity especially if you are not going to drive anywhere later. Just have an assortment of fruits (pineapple, limes, strawberry, watermelon, orange, lemons, etc.) along with some herbs (mint if you can find it, thyme, basil, etc.). Then you can create different fruit/herb pairings to muddle with some simple syrup and mix with tequila and soda/sprite/ginger ale. Warning - do not drive.
