I decided that I would like to make a batch of beer bread that was rectangular in cross section. When I bake it in a pan, it gets a big mound on top which makes it hard to cut into nice slices. My son Robert in Alpharetta made a sort of Pullman loaf. In the hey day of the trains, they would bake fresh bread in a covered pan which constrained the bread into a nice even loaf with a rectangular cross section. So I decided to give it a go and improvise a Pullman pan. I put a greased baking sheet on top of the loaf pan and weighted it down with a cast iron frying pan. It worked great. I got a well formed rectangular loaf. That was cool. I will do it again next time. BTW-I like beer bread because it has a nice hoppy aroma.
