Galveston Island, Texas

It's Crawfish season and it's a really big deal in southeast Texas.
One of our crops (crawfish are raised in the rice fields off season) the stores and restaurants can't get enough of them.
Crawfish Boils are a popular way to entertain friends and family.

Not quite sure... The few times I tried them the cooks may have not known how fix them! I do know they are fun to catch. City ditch where I grew up had tons of them and had a creek out back were the little grandkids used a baited line to catch and release. Food? Has yet to happen but I am willing to take a taste!

I imagine they are delicious. When we lived in central France the fresh water crayfish were sought after - are they the same I wonder?
