there is something slightly ominous about this guillotine-like cheese cutter...at the local 'gourmet' (meaning quality choices, yet absurdly over-priced) shop this display, with scary chopper and funky cheese wheel, raised the question of why this shape, a far cry from processed slices of pseudo-cheese so widely available...apparently in past days cheese wheels could get very large, and the round shape meant moving the product about was easier if it could be rolled along the ground

Great capture and interesting narrative. Parmesan, which we use a lot of, comes in gigantic wheels, too, and it's always a challenge to find the piece with least (and a real victory if none) rind on it. It's best to find a store where employees don't know what they're doing when cutting it up ;-).
