There are many of these "mummies" at Pompeii. The bodies were entombed in ash at the moment of death. The bodies decayed leaving a hollow space with the skeletons. Archeologists punched holes into the open space and filled them with plaster. After the plaster set, they broke away the surrounding material to capture what the bodies looked like at the moment of death.
