Kent Pumpkin cut into large pieces skin on,
Red Onions cut in half, skin on
Cloves of Garlic...place all in a shallow roasting dish, drizzle with olive oil, salt and pepper & roast until softened.
Remove skins ( leave the garlic skins on ) place in a large pot, add a litre of vegetable or chicken stock a sprinkle of nutmeg and slowly cook.
Blitz all with a stick blender, add cream and a sprinkle of fresh thyme or finely chopped chives
