OK – so the cake isn’t for you. I fact, if I’m honest, I’m being a right old cheapskate and I’m in a waste-not, want-not mood and the cake is full of things that are past their sell-by date – to be more precise, out of date cherries and ditto coconut. We’ve had a clear out of the cupboards and I can’t bear to throw food away so I checked them out by sampling a cherry and a dab of coconut and they tasted fine to me.

I know there are lots and lots of shortcomings of this photo (old Canon mushy high iso noise, camera shake and weird white balance from the oven light to name but three) but nonetheless I do love it in an odd, quirky way.

This cake will provide DM with calories to help him in his physical job. He’ll use the carbs to break down into energy and keep him going. It’s all good.

Oh and if you let me know you are coming, I’ll bake that cake and I promise to use fresh ingredients.
