1 cup whole wheat flour
1/2 cup unbleached flour
3/4 teaspoon salt
1 Tablespoon Baking Powder
1/3 cup chopped nuts
1/2 cup coconut milk or Cashew Cream
1/3 cup honey (or 1/2 cup sugar and 2 TBSP water)
1/2 cup mashed ripe banana
Mix dry ingredients in a medium sized bowl. Add nuts.
Mix remaining ingredients in a 2-cup measuring cup and
add water if needed to equal 1 cup of liquid.
Briskly stir liquid into dry ingredients, and
pour into loaf pan lined with parchment paper.
Bake at 350 degrees F for about 40-45 minutes, or
until knife inserted in center comes out clean.
