At last, today I decided to use the burnt ends I got from the last brisket I cooked. This is a part of a whole brisket which is on the end and gets really nicely cooked with a lot of carcinogen laced crust on it. I think carcinogens really add to the flavor of things cooked on the outdoor grill. I used the ends along with a good amount of bacon and other stuff to make some baked beans that turned out tremendous. Add a little sour cream and chopped green onions for garnish, and away you go with a fiber packed meal. I use a recipe that is more like red beans and rice than baked beans. Most baked bean recipes have tons of brown sugar, barbeque sauce and ketchup which just makes it too darn sweet. I wrote down what I did so I can repeat it next time I do a brisket.
