High Five Stuffed Sweet Potatoes

A deliciously unique recipe from "Aarti Paarti - An American Kitchen with an Indian Soul". Aarti is an Indian blogger and Food Network star, who spent many years in Dubai, so her recipes have a combined Indian and Middle Eastern as well as funky slant. She writes engagingly about her life as well as cooking, so even if you never tried one of the many tempting offerings, you will have a "good read".

Topping for the pre-baked potatoes included tahini, honey, lemon zest, lemon juice, sun dried tomatoes, chick peas, pomegranate seeds, toasted pine nuts and parsley. I think I could have done without the tomatoes and used more pine nuts.

Haven't dealt with a pomegranate since I was a child and I remember getting the seeds out was a big chore. Found a great and easier method than I remember in this YouTube video: https://www.youtube.com/watch?v=ej5MDOjkWV8

Update: I had quite a bit of the topping and pomegranate seeds left over, so the next day I added them to a chef salad, along with more toasted pine nuts. Fabulous taste treat!
